Ingredients

The Toast
  • 8 slices brioche bread thick cut (1.5 inch), slightly stale
  • 4 large eggs
  • 0.75 cup whole milk
  • 0.25 cup heavy cream
  • 2 tbsp sugar
  • 1 tbsp vanilla extract
  • 1 tsp cinnamon
  • 1 pinch salt
  • 3 tbsp butter for frying
Toppings
  • 1 cup strawberries fresh, halved
  • 0.25 cup chocolate sauce or melted chocolate ganache
  • 2 tbsp powdered sugar for dusting
  • 4 sprigs fresh mint garnish

Equipment

  • Large Skillet or Griddle
  • Shallow Dish
  • Whisk
  • Spatula

Method

  1. Slice brioche into thick 1.5-inch slices. If fresh, let sit on a wire rack for 30 minutes to dry out.
  2. In a shallow dish, whisk eggs, milk, cream, sugar, vanilla, cinnamon, and salt until completely smooth.
  3. Heat 1 tablespoon of butter in a large skillet over medium heat.
  4. Dip each slice of bread into the custard mixture for 10-15 seconds per side, allowing excess to drip off.
  5. Place soaked bread in the hot skillet. Cook for 3-4 minutes per side until golden brown and crispy.
  6. Repeat with remaining slices, adding more butter to the pan as needed.
  7. Stack two slices on a plate.
  8. Top with fresh strawberries, drizzle generously with chocolate sauce, and dust with powdered sugar.

Notes

For an extra indulgent twist, use chocolate brioche or challah bread if available.
