Cuban Peach Cocktail

Ingredients
  

Liquids
  • 2 oz white rum
  • 1 oz peach schnapps
  • 0.5 oz fresh lime juice
  • 0.5 oz simple syrup
Produce & Garnish
  • 0.5 fresh peach sliced, plus extra for garnish
  • 1 sprig fresh mint for garnish
  • 1 cup ice for shaking and serving

Method
 

  1. Fill a highball glass with fresh ice and set aside to chill.
  2. Place fresh peach slices into a cocktail shaker and muddle thoroughly to release the juices.
  3. Add white rum, peach schnapps, fresh lime juice, and simple syrup to the shaker.
  4. Fill the shaker with ice, secure the lid, and shake vigorously for 15-20 seconds until well-chilled.
  5. Strain the mixture over the fresh ice in your prepared highball glass.
  6. Garnish by sliding extra peach slices down the inside of the glass and topping with a smacked sprig of fresh mint. Serve immediately.

Notes

If using particularly sweet seasonal peaches, you may want to reduce the simple syrup to 0.25 oz to maintain a crisp balance.
