Method
- Fill a highball glass with fresh ice and set aside to chill.
- Place fresh peach slices into a cocktail shaker and muddle thoroughly to release the juices.
- Add white rum, peach schnapps, fresh lime juice, and simple syrup to the shaker.
- Fill the shaker with ice, secure the lid, and shake vigorously for 15-20 seconds until well-chilled.
- Strain the mixture over the fresh ice in your prepared highball glass.
- Garnish by sliding extra peach slices down the inside of the glass and topping with a smacked sprig of fresh mint. Serve immediately.
Notes
If using particularly sweet seasonal peaches, you may want to reduce the simple syrup to 0.25 oz to maintain a crisp balance.
