Ingredients
  

Pineapple Base
  • 2 cans pineapple rings drained and patted dry
  • 2 cups granulated sugar
  • 1 cup light corn syrup for maximum gloss
  • 1 cup water
  • 1 tbsp lemon juice
Neon Colors
  • 4 colors gel food coloring red, blue, yellow, purple

Method
 

  1. Drain pineapple rings and pat them thoroughly dry with paper towels.
  2. Combine sugar, corn syrup, water, and lemon juice in a skillet and bring to a simmer.
  3. Add pineapple rings in a single layer and simmer on low for 25 minutes until translucent.
  4. Remove rings and divide remaining syrup into bowls to mix with gel food colors.
  5. Dip each ring into the colored syrup to fully saturate the fruit fibers.
  6. Place rings on a wire rack to allow excess syrup to drip off and create a glossy finish.
  7. For the wet look, brush with additional warm corn syrup before serving.
  8. Let cool completely before storing between parchment paper layers.

Notes

Use light corn syrup rather than dark to ensure the neon colors stay bright and clear.
