Ingredients
  

Salmon Base
  • 1.5 lbs Atlantic salmon skinless, cubed
  • 1 cup panko breadcrumbs
  • 0.5 cup all-purpose flour
  • 2 large eggs beaten
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
Honey Glaze
  • 3 tbsp salted butter
  • 0.25 cup raw honey
  • 3 cloves garlic minced
  • 2 sprigs fresh rosemary chopped

Equipment

  • Non-stick Skillet
  • Three shallow bowls
  • Paper Towels
  • Wire cooling rack

Method
 

  1. Pat salmon cubes dry and season lightly with salt and pepper.
  2. Dredge cubes in flour, dip in beaten egg, and coat thoroughly with seasoned panko breadcrumbs.
  3. Heat oil in a skillet over medium-high heat. Sear salmon bites for 2-3 minutes per side until golden brown.
  4. Remove salmon from pan. Wipe pan and melt butter over medium heat.
  5. Sauté minced garlic and rosemary for 1 minute, then stir in honey and simmer until thickened.
  6. Toss salmon bites in the glaze or drizzle glaze over the top before serving.

Notes

Ensure the oil is hot before adding salmon to prevent the breading from absorbing too much grease and becoming soggy.
