Ingredients
  

Chicken & Coating
  • 2 lbs chicken wings thawed and dried
  • 1 cup all-purpose flour
  • 0.5 cup cornstarch
  • 1 tbsp baking powder
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 pinch salt and black pepper
  • 1 quart vegetable oil for frying
Creamy Garlic Sauce
  • 0.5 cup unsalted butter melted
  • 5 cloves garlic minced
  • 0.25 cup heavy cream
  • 0.5 cup parmesan cheese grated
  • 2 tbsp fresh parsley chopped
  • 1 tsp lemon juice

  • Deep Fryer or Dutch Oven
  • Mixing bowls
  • Wire rack
  • Whisk

Method
 

  1. Pat chicken wings completely dry with paper towels.
  2. In a shallow bowl, whisk together flour, cornstarch, baking powder, paprika, garlic powder, salt, and pepper.
  3. Dredge wings in the flour mixture, shaking off excess, and let rest on a rack for 10 minutes.
  4. Heat oil in a large pot to 350°F (175°C).
  5. Fry wings in batches for 10-12 minutes until golden brown and cooked through (165°F internal). Drain on a rack.
  6. In a saucepan, sauté minced garlic in melted butter for 1 minute. Whisk in cream, parmesan, and lemon juice until smooth.
  7. Toss hot wings in the sauce until fully coated.
  8. Garnish with fresh parsley and extra shredded parmesan. Serve immediately.

Notes

Do not overcrowd the frying oil or the temperature will drop and wings will be greasy.
