Ingredients
  

Macaroni Base
  • 8 oz elbow macaroni uncooked
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • 1.5 cups sharp cheddar cheese shredded
  • 0.5 cup mozzarella cheese shredded
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Breading & Frying
  • 1 cup all-purpose flour
  • 3 eggs beaten
  • 2 cups Panko breadcrumbs
  • 1 tsp garlic powder
  • 4 cups vegetable oil for frying
  • 1 tbsp fresh parsley chopped, for garnish

Equipment

Method
 

  1. Boil macaroni in salted water until al dente. Drain and set aside.
  2. In a pot, melt butter over medium heat. Whisk in flour and cook for 1 minute.
  3. Gradually whisk in milk and simmer until thickened. Remove from heat and stir in cheeses until melted.
  4. Fold in cooked macaroni. Spread mixture onto a parchment-lined baking sheet and refrigerate for 3-4 hours until firm.
  5. Cut cold mac and cheese into squares or roll into balls.
  6. Dredge each bite in flour, dip in beaten eggs, and coat with Panko breadcrumbs seasoned with garlic powder.
  7. Heat oil in a deep pot to 350°F (175°C).
  8. Fry bites in batches for 3-4 minutes until golden brown. Drain on a wire rack or paper towels.

Notes

Ensure the macaroni mixture is completely cold before frying to prevent the bites from falling apart.
