Ingredients
  

Sandwich Assembly
  • 4 slices sourdough bread thick cut
  • 8 oz deli roast beef thinly sliced
  • 4 slices Provolone cheese
  • 0.5 cup Gruyère cheese shredded (or Swiss)
  • 1 large yellow onion sliced thinly
  • 4 tbsp unsalted butter softened, divided
  • 2 tbsp mayonnaise optional for crust
Au Jus Dipping Sauce
  • 10.5 oz beef consommé or strong beef broth
  • 1 tsp Worcestershire sauce
  • 0.5 tsp garlic powder
  • 0.25 tsp dried thyme
  • 0.5 tsp soy sauce

Method
 

  1. In a small saucepan, combine beef consommé, Worcestershire sauce, garlic powder, thyme, and soy sauce. Simmer for 5-8 minutes, then keep warm.
  2. Melt 1 tbsp butter in a skillet over medium heat. Add sliced onions and cook for 10-12 minutes until caramelized and golden.
  3. Assemble sandwiches: Spread mayo/butter on outer bread slices. Layer inside with Provolone, roast beef, caramelized onions, Gruyère, and second Provolone slice.
  4. Melt remaining butter in the skillet over medium-low heat. Grill sandwiches for 3-4 minutes per side until bread is golden brown and cheese is melted.
  5. Let rest for 1 minute, slice diagonally, and serve immediately with warm au jus for dipping.

Notes

Ensure roast beef is not ice cold before adding to sandwich for better melting.
