- Drain and rinse the white beans. Place them in a bowl with buffalo sauce, garlic powder, onion powder, and cumin.
- Mash the beans until mostly smooth but with some texture remaining.
- Lay out tortillas. Sprinkle cheese on one half, top with bean mixture, and add a little more cheese.
- Fold the tortillas over to close them.
- Heat oil or butter in a skillet over medium heat.
- Fry tacos in batches for 2-3 minutes per side until golden brown and crispy.
- Serve hot with ranch dressing and fresh cilantro.
Notes
Use corn tortillas for a gluten-free option, but ensure they are warm before folding to prevent cracking.
