Ingredients
  

Salmon Bites
  • 1 lb salmon fillets skin removed, cut into 1-inch cubes
  • 1 tbsp olive oil or avocado oil
  • 0.5 cup panko breadcrumbs
  • 1 tbsp cornstarch
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
Bang Bang Sauce
  • 0.5 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha adjust to taste
  • 1 tsp honey optional
  • 1 tsp lemon juice
Garnish
  • 1 tbsp fresh chives chopped

Method
 

  1. Pat the salmon fillets dry with paper towels and cut them into uniform 1-inch cubes.
  2. In a small bowl, mix the panko breadcrumbs, cornstarch, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Drizzle the salmon cubes with olive oil and toss to coat. Then, toss the salmon in the panko spice mixture until evenly coated.
  4. Preheat your air fryer to 400°F (200°C). Spray the basket with cooking spray.
  5. Arrange salmon bites in a single layer in the air fryer basket. Do not overcrowd.
  6. Air fry for 6-8 minutes, shaking the basket halfway through, until golden brown and crispy.
  7. While salmon is cooking, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lemon juice in a bowl.
  8. Once cooked, transfer salmon bites to a bowl. Drizzle with half the sauce and toss gently. Serve immediately with extra sauce and chives on top.

Notes

Ensure salmon is completely dry before seasoning to maximize crispiness.
