- Pat the salmon fillets dry with paper towels and cut them into uniform 1-inch cubes.
- In a small bowl, mix the panko breadcrumbs, cornstarch, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Drizzle the salmon cubes with olive oil and toss to coat. Then, toss the salmon in the panko spice mixture until evenly coated.
- Preheat your air fryer to 400°F (200°C). Spray the basket with cooking spray.
- Arrange salmon bites in a single layer in the air fryer basket. Do not overcrowd.
- Air fry for 6-8 minutes, shaking the basket halfway through, until golden brown and crispy.
- While salmon is cooking, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lemon juice in a bowl.
- Once cooked, transfer salmon bites to a bowl. Drizzle with half the sauce and toss gently. Serve immediately with extra sauce and chives on top.
