Ingredients
  

Pastry Base
  • 1 sheet puff pastry thawed
  • 1 large egg beaten for egg wash
Lobster Filling
  • 1 cup lobster meat cooked and chopped
  • 4 oz cream cheese softened
  • 0.5 cup mozzarella cheese shredded
  • 2 tbsp unsalted butter melted
  • 2 cloves garlic minced
  • 1 tsp lemon zest
  • 0.5 tsp red chili flakes
  • 1 tbsp fresh parsley chopped
  • 1 pinch sea salt flakes for topping

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, mix cream cheese, mozzarella, melted butter, garlic, lemon zest, chili flakes, and parsley until smooth.
  3. Gently fold in the chopped lobster meat.
  4. Unroll the puff pastry and cut into 4 equal rectangles (or 6 for smaller snacks).
  5. Spoon the filling onto the center of each rectangle, leaving a border.
  6. Fold the pastry over the filling and seal the edges by pressing down or crimping with a fork.
  7. Brush the tops generously with egg wash and sprinkle with sea salt flakes.
  8. Bake for 15–20 minutes until puffed and deeply golden brown.
  9. Let cool for 5 minutes before serving to allow filling to set.

Ensure puff pastry stays cold before baking for maximum rise.
