Creamy Garlic Butter Chicken

Ingredients
  

Main Components
  • 1.5 lbs chicken thighs boneless, skinless
  • 10 oz mushrooms cremini or white
  • 1 tbsp olive oil
  • 3 tbsp unsalted butter divided
The Sauce
  • 4 cloves garlic minced
  • 0.5 cup heavy cream
  • 0.25 cup chicken broth or white wine
  • 0.5 cup parmesan cheese freshly grated
  • 1 tsp Italian seasoning
  • 0.5 tsp smoked paprika
  • 2 tbsp fresh parsley chopped

Method
 

  1. Season chicken with salt, pepper, paprika, and half the Italian seasoning.
  2. Heat oil and 1 tbsp butter in a skillet. Sear chicken until golden and cooked through. Remove from pan.
  3. Add 1 tbsp butter to the same pan and sauté mushrooms until browned. Stir in garlic and remaining butter for 1 minute.
  4. Deglaze the pan with chicken broth, scraping up the browned bits.
  5. Pour in heavy cream, remaining seasoning, and Parmesan. Simmer until slightly thickened.
  6. Return chicken to the pan, toss to coat in sauce, and simmer for 2 minutes. Garnish with parsley.

Notes

Use freshly grated Parmesan for the smoothest sauce consistency.
