Ingredients
  

Base Drink
  • 2 cups frozen pineapple chunks
  • 1 cup pineapple juice chilled
  • 0.75 cup cream of coconut such as Coco Lopez
  • 0.5 cup white rum optional, omit for mocktail
  • 1 cup crushed ice
Garnish
  • 3 slices fresh orange
  • 3 items paper cocktail umbrellas optional

  • High-speed blender
  • Hurricane glasses
  • Measuring Cups

Method
 

  1. Place your serving glasses in the freezer for 15 minutes to chill.
  2. In a high-speed blender, add the pineapple juice, cream of coconut, and rum (if using) first.
  3. Add the frozen pineapple chunks and crushed ice on top of the liquid ingredients.
  4. Start blending on low speed to break up the ice, then gradually increase to high speed.
  5. Blend on high for 45-60 seconds until the mixture is completely smooth, thick, and creamy.
  6. Pour the blended mixture immediately into the chilled glasses.
  7. Garnish each glass with a fresh slice of orange and a colorful paper umbrella.
  8. Serve immediately with a wide straw and enjoy cold.

Notes

Ensure you are using 'cream of coconut' (sweetened and thick) and not 'coconut milk' or your drink will lack sweetness and texture. If the blend is too thick, add a splash more pineapple juice.
