Ingredients
  

Base
  • 1 box puff pastry 2 sheets, thawed
  • 1 egg for egg wash
Filling
  • 8 oz Brie cheese chilled
  • 1 cup whole berry cranberry sauce
  • 0.5 cup pecans chopped
Garnish
  • 3 sprigs fresh rosemary
  • 1 tbsp honey optional

Equipment

  • Baking sheet
  • Parchment paper
  • Pizza Cutter or Knife
  • Pastry brush

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Unfold thawed puff pastry on a lightly floured surface. Cut into 2-inch squares or rounds.
  3. Place pastry pieces on the baking sheet, spacing them 1 inch apart.
  4. Cut the Brie into small cubes (rind on or off) and place one cube in the center of each pastry.
  5. Top each piece of cheese with a teaspoon of cranberry sauce and a sprinkle of chopped pecans.
  6. Brush the edges of the pastry with beaten egg for color and shine.
  7. Bake for 15-18 minutes until pastry is puffed and golden brown.
  8. Cool for 5 minutes before garnishing with small sprigs of fresh rosemary.

Notes

Keep pastry dough cold until ready to bake to ensure maximum puffiness.
