Ingredients
  

Seafood Filling
  • 8 small flour tortillas
  • 1 cup cooked shrimp chopped
  • 1 cup lump crab meat
  • 2 tbsp butter
  • 2 cloves garlic minced
  • 0.5 tsp smoked paprika
  • 0.5 tsp chili powder
  • 1 pinch salt and pepper to taste
  • 0.5 cup Monterey Jack cheese shredded (optional binder)
Queso Sauce
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1.5 cups whole milk or heavy cream
  • 1 cup Queso Blanco shredded
  • 2 tbsp fresh cilantro chopped, for garnish

Method
 

  1. Preheat oven to 375°F (190°C). Lightly grease a baking sheet.
  2. In a skillet, melt 2 tbsp butter over medium heat. Sauté garlic until fragrant.
  3. Add chopped shrimp, crab meat, paprika, chili powder, salt, and pepper. Toss gently to warm through (1-2 mins). Optional: Mix in shredded Jack cheese to help bind.
  4. Spoon mixture into tortillas and roll tightly into tubes. Place seam-side down on the baking sheet.
  5. Bake for 12-15 minutes until tortillas are golden and crispy.
  6. Meanwhile, make sauce: Melt remaining butter in a saucepan, whisk in flour for 1 minute.
  7. Slowly add milk, whisking constantly until thickened. Stir in Queso Blanco until melted.
  8. Pour hot cheese sauce over baked tubes and garnish with cilantro. Serve immediately.

Notes

Ensure crab meat is free of shells before mixing.
