- Cook the bacon in a skillet or oven until crispy. Drain on paper towels and chop into small bits.
- Preheat your waffle iron and lightly grease with cooking spray.
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together buttermilk, melted butter (1/3 cup), and eggs.
- Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix.
- Pour batter into the preheated waffle iron and cook according to manufacturer instructions until golden brown (usually 3-5 minutes).
- While waffles cook, make the syrup by mixing the 1/2 cup honey and 1/2 cup melted butter in a small bowl until smooth and glossy.
- Cut waffles into bite-sized squares if using a large iron. Drizzle generously with honey butter syrup and top with bacon bits. Serve warm.
Notes
For spicy waffles, add 1 chopped jalapeƱo to the batter.
