Ingredients
  

Waffle Batter
  • 1 cup yellow cornmeal fine or medium grind
  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1.5 cups buttermilk
  • 0.33 cup unsalted butter melted and slightly cooled
  • 2 eggs large
Toppings & Syrup
  • 6 slices bacon cooked crispy and chopped
  • 0.5 cup honey
  • 0.5 cup butter melted

Method
 

  1. Cook the bacon in a skillet or oven until crispy. Drain on paper towels and chop into small bits.
  2. Preheat your waffle iron and lightly grease with cooking spray.
  3. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt.
  4. In a separate bowl, whisk together buttermilk, melted butter (1/3 cup), and eggs.
  5. Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix.
  6. Pour batter into the preheated waffle iron and cook according to manufacturer instructions until golden brown (usually 3-5 minutes).
  7. While waffles cook, make the syrup by mixing the 1/2 cup honey and 1/2 cup melted butter in a small bowl until smooth and glossy.
  8. Cut waffles into bite-sized squares if using a large iron. Drizzle generously with honey butter syrup and top with bacon bits. Serve warm.

Notes

For spicy waffles, add 1 chopped jalapeƱo to the batter.
