Copycat Cherry Dole Whip Float

A magical, dairy-free cherry soft serve piped sky-high and floated in bubbly black cherry soda, inspired by the famous theme park treat.

Ingredients
  

Cherry Soft Serve
  • 4 cups frozen dark sweet cherries pitted
  • 0.5 cup full-fat coconut milk thick cream from the top of the can
  • 3 tbsp maple syrup or agave
  • 1 tbsp fresh lime juice
  • 1 pinch sea salt
Float Base
  • 2 cans black cherry soda chilled

Equipment

  • High-speed blender or food processor
  • Large piping bag
  • Large open star piping tip (Wilton 1M)

Method
 

  1. Chill your blender pitcher or food processor bowl, as well as your serving cups.
  2. Add the frozen cherries, coconut cream, maple syrup, lime juice, and salt to the food processor or blender.
  3. Blend on high, scraping down the sides as needed, until the mixture transforms into a smooth, creamy soft serve. Do not over-blend to prevent melting.
  4. Transfer the cherry whip into a piping bag fitted with a large star tip. If the mixture is too soft, place the bag in the freezer for 15-20 minutes to firm up.
  5. Pour chilled black cherry soda about halfway up each clear serving cup.
  6. Pipe a tall, swirling peak of the cherry soft serve directly into the center of the soda. Serve immediately with a wide straw and spoon.

Notes

If you don't have a piping bag, you can simply scoop the soft serve into the soda with an ice cream scoop, though it won't have the classic theme park look.
