Dry Ingredients
  • 2 cups all-purpose flour sifted if possible
  • 0.25 cup cornstarch for crispiness
  • 3 tbsp granulated sugar
  • 2 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
Wet Ingredients
  • 2 cups buttermilk room temperature
  • 0.5 cup unsalted butter melted and cooled
  • 2 large eggs separated
  • 2 tsp vanilla extract

Method
 

  1. Preheat your Belgian waffle iron to medium-high heat.
  2. In a large bowl, whisk together flour, cornstarch, sugar, baking powder, baking soda, and salt.
  3. In a medium bowl, whisk buttermilk, melted butter, egg yolks, and vanilla until smooth.
  4. Pour wet ingredients into dry ingredients and mix gently until just combined (lumps are okay).
  5. In a separate clean bowl, beat egg whites until stiff peaks form.
  6. Gently fold the egg whites into the batter using a spatula; do not deflate.
  7. Grease the hot waffle iron. Pour batter into the center and close lid.
  8. Cook for 4-5 minutes or until steam stops rising and waffle is golden brown.
  9. Transfer immediately to a wire rack to cool slightly before serving.

Notes

Keep waffles warm in a 200°F oven on a wire rack to maintain crispiness while cooking the rest of the batch.
