Ingredients
  

Donut Dough
  • 2 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 1 tbsp fresh lime zest
  • 0.75 cup whole milk
  • 2 tbsp unsalted butter melted
  • 1 large egg
  • 1 tsp vanilla extract
  • 4 cups neutral oil for frying
Coating & Glaze
  • 1 cup granulated sugar for rolling
  • 0.5 cup powdered sugar
  • 2 tbsp fresh lime juice
  • 1 tbsp fresh grapefruit juice optional

Equipment

  • Heavy-bottomed pot or Dutch oven
  • Deep-fry thermometer
  • Spider skimmer
  • Wire cooling rack

Method
 

  1. Heat 2 inches of neutral oil in a heavy-bottomed pot to 350°F (175°C).
  2. Whisk together flour, granulated sugar, baking powder, salt, and lime zest in a large bowl.
  3. In a separate bowl, whisk milk, melted butter, egg, and vanilla extract.
  4. Fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
  5. Drop 1-inch scoops of batter into the hot oil. Fry in small batches.
  6. Fry for 2-3 minutes until golden brown all over, turning occasionally.
  7. Remove with a slotted spoon and let cool on a wire rack for 1-2 minutes.
  8. Roll the warm donut holes in the remaining 1 cup of granulated sugar until fully coated.
  9. Whisk powdered sugar, lime juice, and grapefruit juice to make the glaze. Drizzle over the stacked donut holes.

Notes

Keep a close eye on your oil temperature. If it drops too low, the donuts will be greasy. If it's too high, the outside will burn before the inside cooks.
