Method
- Slice the bananas into uniform rounds, about 1/4 inch thick.
- In a small bowl, whisk together the sugar, cinnamon, and salt.
- Heat oil in a skillet over medium heat until shimmering.
- Fry banana slices in batches for 2-3 minutes per side until golden and caramelized.
- Remove with a slotted spoon and immediately toss in the cinnamon sugar mixture.
- Place on a wire rack to cool and harden for 5 minutes.
- Serve immediately while warm or store in an airtight container.
Notes
Use refined coconut oil for a neutral taste or extra virgin for a slight tropical hint.
