  • 0.5 cup granulated sugar
  • 2 tbsp ground cinnamon
  • 0.25 tsp salt
  • 0.25 cup coconut oil for frying

Method
 

  1. Slice the bananas into uniform rounds, about 1/4 inch thick.
  2. In a small bowl, whisk together the sugar, cinnamon, and salt.
  3. Heat oil in a skillet over medium heat until shimmering.
  4. Fry banana slices in batches for 2-3 minutes per side until golden and caramelized.
  5. Remove with a slotted spoon and immediately toss in the cinnamon sugar mixture.
  6. Place on a wire rack to cool and harden for 5 minutes.
  7. Serve immediately while warm or store in an airtight container.

Notes

Use refined coconut oil for a neutral taste or extra virgin for a slight tropical hint.
