Ingredients
  

Roll-Ups
  • 8-10 slices white sandwich bread crusts removed
  • 4 tbsp unsalted butter melted
  • 0.5 cup granulated sugar
  • 1 tbsp ground cinnamon
Custard Batter
  • 2 eggs large
  • 0.33 cup milk
  • 1 tsp vanilla extract
Cooking & Serving
  • 2 tbsp butter for frying
  • 1 cup fresh berries raspberries and strawberries
  • 1 tbsp powdered sugar for dusting
  • 0.5 cup maple syrup warm

Method
 

  1. In a small bowl, whisk together the granulated sugar and ground cinnamon until combined.
  2. In a shallow dish, whisk eggs, milk, and vanilla extract until smooth.
  3. Cut crusts off the bread slices. Use a rolling pin to flatten each slice until thin.
  4. Brush the flattened bread with melted butter, then sprinkle generously with the cinnamon-sugar mixture.
  5. Roll the bread up tightly. Repeat for all slices.
  6. Melt 1 tablespoon of butter in a skillet over medium heat.
  7. Dip each roll quickly into the egg mixture (do not soak), then place in the skillet seam-side down.
  8. Cook until golden brown on all sides, turning frequently, about 2 minutes per side. Add more butter to pan as needed.
  9. Serve immediately topped with powdered sugar, berries, and warm syrup.

Notes

Ensure you place the rolls seam-side down first to seal them.
