Ingredients
  

Chicken Marinade
  • 4 boneless skinless chicken thighs
  • 1 cup buttermilk
  • 2 tbsp pickle juice
Dredge
  • 1.5 cups all-purpose flour
  • 0.5 cup cornstarch
  • 1 tbsp paprika
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder
Cilantro Lime Sauce
  • 0.5 cup mayonnaise
  • 0.5 cup fresh cilantro chopped
  • 1 lime juice and zest
Assembly
  • 4 ciabatta rolls toasted
  • 1 cucumber sliced
  • 0.5 white onion sliced

Method
 

  1. Pound chicken to even thickness. Marinate in buttermilk and pickle juice for at least 30 minutes.
  2. Blend mayonnaise, cilantro, lime juice, zest, and garlic to make the sauce. Refrigerate.
  3. Toss sliced cucumbers and onions with vinegar and sugar for the slaw.
  4. Mix flour, cornstarch, and spices in a shallow dish. Dredge chicken thoroughly.
  5. Fry chicken in 350°F oil for 4-5 minutes per side until golden and cooked through.
  6. Toast buns with butter.
  7. Assemble sandwiches: Bun, sauce, chicken, slaw, more sauce, top bun.

Notes

Ensure oil maintains temperature between batches for best crunch.
