- In a bowl, whisk eggs and sugar until frothy. Add melted butter and vanilla.
- Stir in flour and salt, then add milk gradually to form a batter.
- Pour small amount of batter into preheated waffle maker. Cook 1-2 minutes until golden.
- Immediately fold warm waffle over a book spine or taco holder to curve. Hold until cool and set.
- Whip heavy cream, cocoa, powdered sugar, and vanilla until stiff peaks form.
- Pipe mousse into cooled waffle shells using a star tip.
- Melt chocolate chips with coconut oil in microwave. Drizzle over tacos.
- Sprinkle with chopped nuts immediately and serve.

Work quickly when folding the waffles as they harden fast.
