Ingredients
  

Waffle Shells
  • 2 large eggs room temperature
  • 0.5 cup granulated sugar
  • 1 tsp vanilla extract
  • 0.25 cup unsalted butter melted and cooled
  • 1 cup all-purpose flour
  • 3 tbsp whole milk
Chocolate Mousse Filling
  • 2 cups heavy whipping cream very cold
  • 0.5 cup cocoa powder unsweetened
  • 0.75 cup powdered sugar
  • 1 tsp vanilla extract
Toppings
  • 1 cup semi-sweet chocolate chips
  • 1 tbsp coconut oil for shine
  • 0.5 cup peanuts or hazelnuts chopped and roasted

Equipment

  • Waffle cone maker or Waffle iron
  • Hand mixer
  • Piping bag
  • Mixing bowls

Method
 

  1. In a bowl, whisk eggs and sugar until frothy. Add melted butter and vanilla.
  2. Stir in flour and salt, then add milk gradually to form a batter.
  3. Pour small amount of batter into preheated waffle maker. Cook 1-2 minutes until golden.
  4. Immediately fold warm waffle over a book spine or taco holder to curve. Hold until cool and set.
  5. Whip heavy cream, cocoa, powdered sugar, and vanilla until stiff peaks form.
  6. Pipe mousse into cooled waffle shells using a star tip.
  7. Melt chocolate chips with coconut oil in microwave. Drizzle over tacos.
  8. Sprinkle with chopped nuts immediately and serve.

Notes

Work quickly when folding the waffles as they harden fast.
