Chicken Avocado Melt Sandwich

A crispy, cheesy, and creamy sandwich featuring seasoned chicken breast, smashed avocado with lime and red onion, and melted cheddar cheese on golden sourdough bread.

Ingredients
  

Sandwich Base
  • 4 slices Sourdough or Artisan Bread thick cut
  • 3 tbsp Unsalted Butter softened
  • 1 cup Chicken Breast cooked and sliced/shredded
  • 4 slices Cheddar Cheese sharp
  • 4 slices Monterey Jack Cheese
Avocado Mash
  • 1 Large Avocado ripe
  • 1 tbsp Red Onion finely minced
  • 1 tsp Lime Juice fresh
  • 0.25 tsp Salt
  • 0.25 tsp Black Pepper
  • 1 tsp Cilantro chopped (optional)

Method
 

  1. In a small bowl, scoop out the avocado flesh. Add lime juice, minced red onion, cilantro, salt, and pepper. Mash with a fork until chunky but spreadable.
  2. Lay out the bread slices. Spread the avocado mixture on two of the slices.
  3. Layer the ingredients on the avocado-covered slices: one slice of Monterey Jack, the cooked chicken, and then a slice of Cheddar on top.
  4. Top with the remaining bread slices. Spread softened butter generously on the top outer slice of each sandwich.
  5. Heat a large skillet over medium-low heat. Place sandwiches in the skillet, butter-side down.
  6. While the first side cooks, butter the side now facing up. Cover the pan with a lid and cook for 3-4 minutes until golden brown and cheese begins to melt.
  7. Remove lid, flip the sandwiches carefully, and cook the second side for 3-4 minutes (uncovered) until crispy and deep golden brown.
  8. Remove from pan, let rest for 1 minute, cut in half diagonally, and serve immediately.

Notes

For extra crunch, mix a teaspoon of mayonnaise with your butter before spreading on the bread.
