Ingredients
  

Fries and Cheese
  • 16 oz frozen waffle-cut potatoes one standard bag
  • 1.5 cups sharp cheddar cheese freshly grated, not bagged
  • 0.5 cup low-moisture provolone cheese freshly grated
Honey Glaze and Garnish
  • 0.5 cup honey wildflower or clover
  • 2 tbsp unsalted butter melted
  • 1 tbsp fresh parsley finely chopped
  • to taste salt and pepper
  • pinch smoked paprika optional

Method
 

  1. Preheat oven to 425°F (220°C). Line a heavy baking sheet with parchment paper.
  2. Spread frozen waffle potatoes in a single, even layer (no overlapping). Bake for 18-22 minutes until golden and very crispy, flipping halfway.
  3. While fries bake, whisk together honey, melted butter, salt, pepper, and paprika (if using) in a small bowl for the glaze.
  4. Remove the pan from the oven. Bunch the fries together. Heavily top with the freshly grated cheddar and provolone mix.
  5. Change oven to high broil. Place the loaded baking sheet on the upper rack and broil 2-3 minutes until cheese is melted and bubbling.
  6. Remove from oven, immediately drizzle with the honey glaze, and garnish with fresh parsley. Serve hot.

Notes

Always grate your cheese from a block. The starchy anti-caking agents on pre-grated cheese will prevent a smooth melt. For Hot Honey Fries, use a hot-honey variety.
