- Preheat oven to 425°F (220°C). Line a heavy baking sheet with parchment paper.
- Spread frozen waffle potatoes in a single, even layer (no overlapping). Bake for 18-22 minutes until golden and very crispy, flipping halfway.
- While fries bake, whisk together honey, melted butter, salt, pepper, and paprika (if using) in a small bowl for the glaze.
- Remove the pan from the oven. Bunch the fries together. Heavily top with the freshly grated cheddar and provolone mix.
- Change oven to high broil. Place the loaded baking sheet on the upper rack and broil 2-3 minutes until cheese is melted and bubbling.
- Remove from oven, immediately drizzle with the honey glaze, and garnish with fresh parsley. Serve hot.
Notes
Always grate your cheese from a block. The starchy anti-caking agents on pre-grated cheese will prevent a smooth melt. For Hot Honey Fries, use a hot-honey variety.
