Ingredients
  

Cheesecake Mousse
  • 8 oz cream cheese softened
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream cold
Apple Layer
  • 1 Granny Smith apple diced
  • 1 Fuji or Gala apple diced
  • 1 tbsp lemon juice
  • 1 tbsp sugar
  • 0.5 tsp cinnamon
Assembly
  • 9 sheets graham crackers crushed
  • 3 tbsp unsalted butter melted
  • 0.5 cup caramel sauce thick

Equipment

Method
 

  1. Crush graham crackers into coarse crumbs and mix with melted butter. Set aside.
  2. Dice apples into small cubes. Toss immediately with lemon juice, sugar, and cinnamon.
  3. Beat softened cream cheese, powdered sugar, and vanilla until smooth.
  4. In a separate bowl, whip heavy cream to stiff peaks. Gently fold into the cream cheese mixture.
  5. Spoon cheesecake mixture into the bottom of cups.
  6. Layer with graham crumbs, diced apples, and a drizzle of caramel.
  7. Repeat layers, ending with a large swirl of mousse or whipped cream.
  8. Top generously with caramel sauce and remaining crumble before serving.

Notes

For clean layers, use a piping bag to add the cheesecake mousse into the cups.
