Buttery Apple Cobbler

Ingredients
  

Apple Filling
  • 6 cups apples peeled, cored, and sliced (Granny Smith or Honeycrisp)
  • 0.5 cup granulated sugar
  • 0.5 cup light brown sugar packed
  • 1 tsp ground cinnamon
  • 0.25 tsp ground nutmeg
  • 1 tbsp fresh lemon juice
  • 1 tsp vanilla extract
Cobbler Batter
  • 0.5 cup unsalted butter 1 stick
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 0.25 tsp salt
  • 1 cup whole milk room temperature
  • 1 tsp vanilla extract

  • 9x13 inch baking dish
  • Large mixing bowl
  • Medium mixing bowl

Method
 

  1. Preheat oven to 375°F (190°C). Place the stick of butter in a 9x13 inch baking dish and place in the oven for 5-7 minutes until melted. Remove from oven.
  2. In a large bowl, toss the sliced apples with 1/2 cup granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and 1 tsp vanilla until evenly coated.
  3. In a separate bowl, whisk together the flour, 1 cup granulated sugar, baking powder, and salt. Stir in the milk and remaining 1 tsp vanilla just until combined. Do not overmix.
  4. Pour the batter directly over the melted butter in the baking dish. DO NOT STIR.
  5. Spoon the spiced apple mixture and any accumulated juices evenly over the batter. DO NOT STIR.
  6. Bake for 40-45 minutes until the crust is golden brown and the apples are bubbling. Let rest for 15 minutes before serving warmly with vanilla ice cream.

Notes

Do not mix the layers in the pan! Pouring the batter over the butter and the apples over the batter allows the crust to magically rise to the top while baking.
