Blue Raspberry Lemonade

Ingredients
  

Blue Raspberry Syrup Base
  • 1 cup granulated sugar
  • 1 cup water
  • 1 tsp blue raspberry extract or flavoring
  • 2 drops blue food coloring neon blue gel works best
Lemonade Assembly
  • 1 cup fresh lemon juice approx 4-6 lemons
  • 4 cups cold water still or sparkling
  • 4 cups ice cubes
Garnish
  • 0.5 cup fresh blueberries
  • 0.5 cup fresh raspberries
  • 1 bunch fresh mint
  • 1 lemon sliced into wheels

Equipment

  • Citrus Juicer
  • Small Saucepan
  • Long Spoon

Method
 

  1. To make the syrup: In a small saucepan, combine 1 cup sugar and 1 cup water. Heat over medium heat, stirring until sugar is completely dissolved. Remove from heat.
  2. Stir in the blue raspberry extract and blue food coloring into the sugar syrup. Let it cool completely.
  3. Juice the fresh lemons to obtain 1 cup of juice. Strain out seeds.
  4. In a large pitcher, combine the fresh lemon juice, 4 cups of cold water, and the cooled blue raspberry syrup. Stir well.
  5. Taste test: If it is too tart, add a splash more water. If too sweet, add a squeeze more lemon.
  6. Fill tall glasses to the top with ice cubes.
  7. Pour the lemonade over the ice.
  8. Top with fresh blueberries, raspberries, and a sprig of mint. Serve immediately.

Notes

For a sparkling version, replace the cold water with Club Soda or Sprite just before serving.
