- To make the syrup: In a small saucepan, combine 1 cup sugar and 1 cup water. Heat over medium heat, stirring until sugar is completely dissolved. Remove from heat.
- Stir in the blue raspberry extract and blue food coloring into the sugar syrup. Let it cool completely.
- Juice the fresh lemons to obtain 1 cup of juice. Strain out seeds.
- In a large pitcher, combine the fresh lemon juice, 4 cups of cold water, and the cooled blue raspberry syrup. Stir well.
- Taste test: If it is too tart, add a splash more water. If too sweet, add a squeeze more lemon.
- Fill tall glasses to the top with ice cubes.
- Pour the lemonade over the ice.
- Top with fresh blueberries, raspberries, and a sprig of mint. Serve immediately.
Notes
For a sparkling version, replace the cold water with Club Soda or Sprite just before serving.
