Method
- Line a 9x9 inch square baking pan with parchment paper and lightly grease with butter.
- In a large pot over low heat, melt the salted butter completely.
- Add all but 2 cups of the mini marshmallows to the pot. Stir constantly until melted and smooth. Remove from heat immediately.
- Stir in the vanilla extract.
- Add the Rice Krispies cereal to the pot and fold until coated with the marshmallow mixture.
- Fold in the crushed Oreo cookies and the remaining 2 cups of fresh mini marshmallows.
- Transfer mixture to the prepared pan. Gently press into an even layer using a greased spatula or wet hands (do not pack tightly).
- Immediately top with Mini Oreos and extra marshmallows while warm.
- Allow to set at room temperature for 30 minutes before slicing into squares.
Notes
Do not store in the fridge, as they will become hard.
