Ingredients
  

Secret Sauce
  • 0.5 cup mayonnaise full fat
  • 2 tbsp sour cream or plain Greek yogurt
  • 1 tsp Dijon mustard
  • 0.5 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 1 tsp pickle juice or lemon juice
  • 0.25 tsp black pepper freshly ground
Wrap Assembly
  • 4 flour tortillas large, 10-inch or 12-inch
  • 12 slices thick-cut bacon
  • 2 cups iceberg lettuce shredded
  • 2 tomatoes diced and drained
  • 1 tbsp butter or olive oil, for grilling

Method
 

  1. Preheat oven to 400°F (200°C). Lay bacon flat on a parchment-lined baking sheet and bake for 15-20 minutes until crispy. Drain on paper towels.
  2. In a small bowl, whisk together mayonnaise, sour cream, Dijon mustard, smoked paprika, garlic powder, pickle juice, and black pepper. Set aside.
  3. Warm tortillas slightly in a dry skillet or microwave to make them pliable.
  4. Spread a generous tablespoon of secret sauce down the center of each tortilla.
  5. Layer shredded lettuce, diced tomatoes, and crispy bacon over the sauce.
  6. Fold the sides of the tortilla inward, then roll from the bottom up to seal tightly like a burrito.
  7. Heat butter or oil in a skillet over medium-high heat. Place wraps seam-side down and toast for 1-2 minutes per side until golden brown.
  8. Slice in half on a diagonal and serve immediately.

Notes

To prevent a soggy wrap, ensure your tomatoes are drained of excess juice and your lettuce is completely dry before assembling.
