Ingredients
  

The Wraps
  • 4 large flour tortillas 10-inch burrito size
  • 12 slices thick-cut bacon cooked crispy
  • 2 large ripe tomatoes diced
  • 2 cups Romaine lettuce shredded
  • 1 tsp olive oil or butter for toasting
Secret Sauce
  • 0.5 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tsp fresh lemon juice
  • 0.5 tsp garlic powder
  • 0.25 tsp smoked paprika
  • 0.25 tsp black pepper

Method
 

  1. Cook the bacon until crispy and drain on paper towels. Dice the tomatoes, sprinkle lightly with salt, and let drain on a paper towel.
  2. In a small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, garlic powder, smoked paprika, and black pepper to make the Secret Sauce.
  3. Warm the tortillas slightly so they are pliable. Spread 2 tablespoons of the sauce evenly over the bottom half of each tortilla.
  4. Layer the shredded lettuce over the sauce, followed by the diced tomatoes, and top with 3 slices of bacon per wrap.
  5. Fold the sides of the tortilla inward, then roll from the bottom up as tightly as possible.
  6. Heat a large skillet over medium heat with a little olive oil or butter. Place the wraps seam-side down and toast for 2-3 minutes until sealed and golden brown.
  7. Flip the wraps and toast the other sides for an additional 1-2 minutes until crispy all over. Slice in half and serve immediately.

Notes

Do not assemble the wraps in advance, as the wet ingredients will make the tortilla soggy. Instead, prep the ingredients and store them separately, assembling and toasting right before eating.
