Ingredients

Fresh Fruit
  • 1.5 lbs fresh strawberries washed, hulled, and sliced vertically
  • 4 small mandarin oranges peeled and separated into segments
  • 2 large bananas sliced into thick coins
  • 1 bunch green grapes washed and dried
  • 1 dry pint blueberries washed and dried
  • 1 dry pint raspberries washed and dried
  • 1 tbsp fresh lemon juice for tossing the bananas

Equipment

  • Large rectangular serving tray
  • Sharp paring knife
  • Cutting board
  • Colander

Method

  1. Wash all berries and grapes thoroughly. Pat them completely dry with a clean towel to prevent the tray from becoming watery.
  2. Slice the hulled strawberries vertically into flat petal shapes. Peel the oranges and separate the segments. Slice the bananas into rounds and immediately toss gently in lemon juice to prevent browning.
  3. Begin assembling the platter by placing a few blueberries or raspberries spaced out on the tray to act as flower centers.
  4. Arrange the sliced strawberries in a circular, overlapping pattern around some of the centers to create red flowers.
  5. Arrange the mandarin orange segments around the other centers to create bright orange flowers.
  6. Fill the gaps between the flowers with clusters of green grapes, creating a leafy garden effect.
  7. Group the lemon-tossed banana slices neatly in the corners or along the edges of the tray.
  8. Fill any remaining small empty spaces with the leftover blueberries and raspberries until the tray is completely full and bountiful.
  9. Serve immediately or cover tightly with plastic wrap and refrigerate for up to 2 hours before your event.

Notes

Ensuring the fruit is completely dry before assembling is the secret to a neat, professional-looking platter. Wet fruit will make the board soggy.
