Ingredients

Aioli Base
  • 1 large egg yolk room temperature
  • 1 tbsp lemon juice freshly squeezed
  • 2 cloves garlic minced or grated
  • 0.5 tsp salt plus more to taste
  • 0.25 cup fresh basil leaves packed
  • 0.75 cup light olive oil or half olive oil/half canola

Equipment

  • Immersion Blender or Food Processor
  • Tall Jar or Mixing Bowl
  • Knife and cutting board

Method

  1. Wash basil leaves thoroughly and pat them completely dry with paper towels to prevent excess moisture.
  2. Roughly chop the fresh basil and mince the garlic cloves finely.
  3. In a tall jar suitable for an immersion blender, combine the egg yolk, lemon juice, minced garlic, chopped basil, and salt.
  4. Pour the oil on top of the other ingredients. Allow it to settle for a moment.
  5. Place the immersion blender head at the very bottom of the jar. Turn it on high speed and hold it still against the bottom for 10-15 seconds until the mixture turns white and creamy at the base.
  6. Slowly tilt and lift the blender head to incorporate the remaining oil at the top until fully emulsified.
  7. Taste and adjust with more salt or lemon juice if needed. Serve immediately or refrigerate.

Notes

Ensure all ingredients are at room temperature for the best emulsion results.
