Ingredients
  

Dough
  • 4 cups all-purpose flour plus extra
  • 1 packet active dry yeast 2.25 tsp
  • 0.25 cup granulated sugar
  • 0.75 cup whole milk warm
  • 1 cup mashed bananas very ripe
  • 0.25 cup unsalted butter melted
  • 1 egg large
Filling
  • 0.5 cup unsalted butter very soft
  • 1 cup brown sugar packed
  • 2 tbsp ground cinnamon
Glaze
  • 4 oz cream cheese softened
  • 1.5 cups powdered sugar
  • 2 tbsp heavy cream

Equipment

  • Stand mixer or large bowl
  • 9x13 inch baking pan

Method
 

  1. Whisk warm milk, sugar, and yeast; let sit for 10 minutes until foamy.
  2. Mix in mashed bananas, melted butter, and egg.
  3. Gradually add flour and salt, kneading for 5-7 minutes until smooth dough forms.
  4. Cover and let rise in a warm place for 1.5 hours until doubled.
  5. Roll dough into an 18x12 rectangle, spread with soft butter, and sprinkle with cinnamon sugar.
  6. Roll tightly, cut into 12 pieces, and place in a greased pan.
  7. Cover and rise for 45 minutes. Bake at 350°F for 25-30 minutes.
  8. Whisk glaze ingredients and spread over warm rolls.

Notes

Use very spotty bananas for best flavor. Do not overheat the milk or it will kill the yeast.
