Banana Bread Cinnamon Rolls

Ingredients
  

Banana Yeast Dough
  • 4.5 cups all-purpose flour divided
  • 2 ripe bananas mashed (approx 3/4 cup)
  • 1 packet instant yeast 2 1/4 tsp
  • 0.5 cup warm milk 110°F
  • 0.25 cup sugar
  • 0.25 cup unsalted butter melted
  • 1 egg large
  • 1 tsp salt
Filling
  • 0.33 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 2 tbsp ground cinnamon
Glaze
  • 1.5 cups powdered sugar
  • 2-3 tbsp milk
  • 1 tsp vanilla extract

Equipment

  • Stand mixer or large bowl
  • 9x13 Baking Pan
  • Rolling Pin
  • Dental Floss or Knife
  • Whisk

Method
 

  1. In a large bowl, whisk together mashed bananas, warm milk, melted butter, sugar, and egg.
  2. Stir in yeast, then gradually add flour and salt. Knead for 8-10 minutes until smooth and elastic.
  3. Place dough in a greased bowl, cover, and let rise in a warm place until doubled (about 1-1.5 hours).
  4. Turn dough out onto a floured surface and roll into a 12x18 inch rectangle.
  5. Spread softened butter over the dough and sprinkle evenly with brown sugar and cinnamon mixture.
  6. Roll the dough tightly into a log and cut into 12 even rolls.
  7. Place rolls in a greased 9x13 inch pan. Cover and let rise again for 30-45 minutes.
  8. Preheat oven to 350°F (175°C). Bake rolls for 20-25 minutes until golden brown.
  9. Whisk glaze ingredients together. Drizzle over warm rolls before serving.

Notes

For extra crunch, add chopped walnuts to the filling.
