Apple & Goat Cheese Croissant Sandwich

Ingredients
  

Sandwich Components
  • 2 large all-butter croissants bakery-style, sliced in half horizontally
  • 4 oz plain fresh goat cheese (chèvre) softened to room temperature
  • 1 medium sweet-tart apple Honeycrisp or Fuji, thinly sliced
  • 6 slices thick-cut bacon cooked until crispy
  • 1 handful fresh baby arugula
  • 2 tbsp honey or hot honey for a spicy kick
  • 1 pinch flaky sea salt optional

Method
 

  1. Preheat oven to 400°F (200°C). Lay thick-cut bacon flat on a lined baking sheet and bake for 15-20 minutes until crispy. Drain on paper towels.
  2. While bacon cooks, thinly slice the apple into wedges and ensure the goat cheese is at room temperature for easy spreading.
  3. Slice croissants in half and toast them cut-side up in the oven for 3-5 minutes until warm and crispy.
  4. Spread a generous layer of softened goat cheese on the bottom half of each toasted croissant.
  5. Layer the thinly sliced apples over the goat cheese.
  6. Break the cooked bacon strips in half and layer them over the apples.
  7. Top with a handful of fresh baby arugula.
  8. Drizzle honey generously over the greens and bacon, and finish with a pinch of flaky sea salt if desired.
  9. Place the top half of the croissant on the sandwich, press lightly, and serve immediately.

Notes

Do not assemble sandwiches ahead of time as the croissants will become soggy. Ingredients can be prepped in advance.
