Apple Celery Peanut Butter Snails

Ingredients
  

Snail Base and Shell
  • 1 stalk celery washed, dried, and cut into 3-inch logs
  • 2-3 tbsp creamy peanut butter or substitute with cream cheese or sunflower seed butter
  • 1 slice red apple cut 1/4 inch thick with skin left on
Snail Features
  • 1 pretzel stick snapped in half
  • 2 mini chocolate chips for eyes
  • 1 splash lemon juice optional, to prevent apple from browning

Equipment

  • Cutting board
  • Paring Knife
  • Butter knife or spoon

Method
 

  1. Wash and thoroughly dry the celery stalk. Cut into 3 to 4-inch pieces to serve as the snail body.
  2. Using a butter knife, generously fill the hollow portion of the celery stick with peanut butter, mounding it slightly at the top.
  3. Take a 1/4-inch slice of red apple (avoiding the core). Using a small paring knife, gently score a spiral pattern into the red skin, cutting just deep enough to reveal the white flesh.
  4. If not serving immediately, lightly brush the cut apple surface with lemon juice to prevent browning.
  5. Press the flat, cut side of the apple slice firmly into the center of the peanut butter on the celery log to form the shell.
  6. Poke the two broken pretzel halves into the peanut butter at the front of the celery to create antennae.
  7. Press the mini chocolate chips into the peanut butter just below the antennae for eyes. Serve immediately and enjoy!

Notes

Ensure the celery is completely dry before adding peanut butter, or the filling will slip out.
