Ingredients

Cocktail Base
  • 2 oz amaretto liqueur
  • 3 oz pineapple juice chilled
  • 1.5 oz cranberry juice cocktail chilled
  • 1 cup ice cubes for serving
Garnish
  • 1 wedge fresh pineapple optional
  • 1 whole maraschino cherry optional

Equipment

  • Large stemmed wine or copa glass
  • Bar Spoon
  • Jigger or measuring spoons

Method

  1. Fill a large, elegant stemmed glass entirely to the brim with fresh ice cubes.
  2. Pour the amaretto liqueur directly into the bottom of the glass.
  3. Add the chilled pineapple juice over the amaretto and gently stir the two bottom ingredients together.
  4. Hold a spoon upside down just above the liquid line, resting the tip against the inside of the glass.
  5. Slowly pour the cranberry juice cocktail over the back of the spoon so it gently cascades and floats on top of the pineapple mixture, creating a pink gradient.
  6. Garnish the rim of the glass with a fresh pineapple wedge and drop in a cherry.
  7. Serve immediately with a straw. Instruct guests to stir before drinking to mix the flavors.

Notes

Pouring the cranberry juice slowly over the back of a spoon is the secret to achieving the distinct layered 'sunrise' look. If you don't care about layers, you can shake all ingredients with ice and strain for a frosty, frothy pink drink.
