Ingredients
  

Mocktail Base
  • 4-5 whole fresh blackberries plus extra for garnish
  • 0.5 oz fresh lime juice about half a lime
  • 1 cup crushed ice enough to fill the glass
  • 3 oz pineapple juice 100% juice, chilled
  • 3 oz ginger beer non-alcoholic, chilled
Garnishes
  • 1 slice fresh pineapple wedge
  • 1 leaf pineapple leaf optional

Equipment

  • Highball or Collins glass
  • Cocktail muddler

Method
 

  1. Place the fresh blackberries and lime juice into the bottom of a tall highball glass.
  2. Using a muddler or the back of a wooden spoon, firmly press and twist the berries to release their juices, creating a thick syrup base.
  3. Fill the glass completely to the rim with crushed ice.
  4. Slowly pour the pineapple juice over the ice so it rests above the dark berry layer.
  5. Top off the glass with the chilled ginger beer.
  6. Garnish the rim with a fresh pineapple wedge, a pineapple leaf, and a single blackberry nestled in the top ice. Serve immediately with a straw.

Notes

Using crushed ice rather than standard cubed ice is essential for achieving the beautiful, distinct color gradient in the glass.
