Method
- Place the fresh blackberries and lime juice into the bottom of a tall highball glass.
- Using a muddler or the back of a wooden spoon, firmly press and twist the berries to release their juices, creating a thick syrup base.
- Fill the glass completely to the rim with crushed ice.
- Slowly pour the pineapple juice over the ice so it rests above the dark berry layer.
- Top off the glass with the chilled ginger beer.
- Garnish the rim with a fresh pineapple wedge, a pineapple leaf, and a single blackberry nestled in the top ice. Serve immediately with a straw.
Notes
Using crushed ice rather than standard cubed ice is essential for achieving the beautiful, distinct color gradient in the glass.
